Hi you guys!! This was technically supposed to go live last week, but I just couldn't pull it together before we left for Mexico.  Sooo here it is! Lucky for you the recipes may older than this past week, but the food ideas are FRESH. I know I'm getting ahead of myself, but I'm eager for fall to get here, so I can make/share yummy chillies and soups. I CAN ALREADY FEEL THE FIRST CHILL. 

This past week was pretty stressful, but luckily we prepared to cook, so we were able to make better food decisions than the normal "order a pizza" stress eating that we tend to do. Don't get me wrong, I love a pizza here and there, but everyday does not do ya good! I had a fast food sandwich that will remain nameless yesterday and my body HATE ME all day. Isn't it funny how our bodies react. If only our taste buds did too! I will say, that I bought all the items for meals for this upcoming week (You probably won't see them until week 5), but I was looking for healthier versions of comfort food, so get ready for that!

Recipe: Mexican Cauliflower Rice Skillet

Adaptations: I added avocado, jalepeno, and cilantro!

Wine pairing: Barolo 

My thoughts: I really liked this! It's pretty much a guilt-free Mexican dish. I also didn't add all the cheese at once, because I prefer to add some to my individual bowl.

Nick's Rating: 8

Any leftovers? Yes!! At least 4 extra servings if not more.

Can I make it vegetarian?  I would honestly probably still love it even if I switched out the meat for black beans and pinto beans!

Recipe: Sous Vide Salmon + Broccoli 

I mentioned on week 2 that Nick got a sous vide recently and we used it on salmon for the first time. So good! For broccoli, I just just sprinkle with lemon, olive oil, garlic, and cracked red pepper and bake for 25 minutes on 350 F.

Adaptations: All our own.

Wine pairing: Pinot Noir

My thoughts: Our new favorite way to make salmon!

Any leftovers? Depends how much you eat!  I ate about half of this.

Can I make it vegetarian?  Eh. Broccoli?

Recipe: Sous Vide Steak + Potatoes + Salad

Potatoes are just baked at 425 F with olive oil and broiled a little bit after 25ish minutes. 

Salad is spinach with raspberries, feta, red onion, and balsamic.

Adaptations: Ours :)

Wine pairing: Cabernet Sauvignon  or Bordeaux

My thoughts: It's a a super easy/classic meal, that I won't get tired of.

Any leftovers? Yep! I only at half of this. Nick ate slightly more of his, but we had enough for 1 lunch for Nick.

Can I make it vegetarian?  Kinda? lol Delete the meat.

Recipe: Orange Cauliflower

Adaptations: I actually made it with both cauliflower and chicken! I also added pineapple.

Wine pairing: Sauvignon Blanc

My thoughts: The fresh orange juice really makes it!!

Any leftovers? Yes -about 2ish extra servings.

Can I make it vegetarian?  The original recipe is!!

Recipe: Turkey Zucchini Burgers 

For the salad I just did blueberries, spinach, and balsamic!

Adaptations: This time I made meatballs, but I didn't change the recipe. I've made the yogurt sauce before, but I didn't this time. It cools off the cayenne, but you don't haaaave to have it.

Wine pairing: Syrah

My thoughts: I've made this several times. It's easy, good, and filling.

Any leftovers? About 2 extra servings, depending on the sides you serve it with.

Can I make it vegetarian?  Not really.

Recipe: Green Juice

  • 1 pineapple
  • 2 lemons
  • 2 fingers of turmeric
  • 4 tbs ginger
  • couple handfuls of spinach

Adaptations: Just a recipe we do :)

Wine pairing: n/a

My thoughts: It's our favorite because the pineapple makes it sweet, but the ginger cuts the sweetness. Plus you get some veggies in there!

Any leftovers? We usually just divide it in half and drink it all, together!

Can I make it vegetarian?  It is!

Recipe: Breakfast tacos w/leftover tortillas and chicken from the chicken enchiladas I shared on week 2! We added egg, avocado, and salsa.

Adaptations: It is an adaptation because I used stuff from previous meals ;)

Wine pairing: n/a

My thoughts:  Easy and so good!

Any leftovers? Nope, because it was made from leftovers.

Can I make it vegetarian?  Yep, just don't put the meat!
